Lemon cookies for teatime
I have had a hankering for lemon cookies for a couple of weeks now, so yesterday after church, I whipped up the dough, grabbed the latest novel I've been reading, and sat and read while the dough chilled in the fridge before baking. It was a great way to spend a rainy Sunday afternoon, and … now I have extra cookies!
The recipe was a variation on this one from Kroll's Korner. Since I had no lemon flavoring on hand, I used two teaspoons of vanilla and a lot more lemon zest (I zested two lemons, using half of it in the dough and half for garnish).
I love the soft, chewy texture of these cookies, and with some lemon in my English Breakfast tea, this was just the lemony teatime treat I had hoped for, and I tucked the leftovers in the freezer for the next time a lemon craving comes my way!
